Positive Affirmations Audio & Video

Having a positive mental attitude can help us cope with difficult circumstances, and provide a solid foundation to achieve success in accomplishing important goals. This positive affirmation audio can be used daily to uplift you and to hep set and maintain new patterns of self-belief and confidence.


Easy Pancakes 

You don’t have to wait until pancake day to treat yourself to these yummy, easy to make pancakes! With just 5 ingredients, whip up a healthy (or not so healthy if you prefer) snack or breakfast. *Top tip – add some melted chocolate if you feel like it. 


100g plain flour 

2 large eggs (omit if vegan) 

300ml milk/milk alternative (400ml if omitting eggs) 

1 tbsp sunflower or vegetable oil, plus a little extra for frying 

1 lemon 

Pinch of salt

Lemon wedges, to serve (optional) 

Caster sugar, to serve (optional) 


Remember to wash your hands until you finish singing the happy birthday song (twice)! 

1. Put your oven on a low heat (this will keep you pancakes warm when cooked).

2. Put the flour, eggs (omit if vegan), milk/milk alternative, sunflower/vegetable oil and a pinch of salt into a bowl and whisk until a smooth batter. 

3. Set aside for 30 mins to rest if you have time, or start cooking straight away. 

4. Set a medium frying pan or crêpe pan over a medium heat and carefully wipe it with some oiled kitchen paper. 

5. When hot, cook your pancakes for 1 min on each side until golden, keeping them warm in a low-heat oven as you go. 

Serve with lemon wedges and caster sugar, or your favourite filling. Once cold, you can layer the pancakes between baking parchment, then wrap in cling film and freeze for up to 2 months.
